Mushroom Fried Rice

Any kind of fried rice is simple to make. Mushroom fried rice is the easiest of them all. Today I found a pack of mushrooms lying in the fridge. So got an idea to make this fried rice. Usually I stir fry mushrooms. But after making the fried rice today, I feel like never doing stir fry again. :)
Before I get onto the recipe, you should know about its health benefits. Certain vegetarians do not use mushrooms, but they should know that it is a good source of protein, fiber, vitamins which vegetarians miss in their regular diet. After realizing about its health benefits, I try to cook mushrooms at least once a month.


 Here it goes:
 
Ingredients:

Chopped Mushrooms - 1 cup
Basmathi Rice - 1 cup
Peas - 1/2 cup(frozen)
Chopped Onions - 1/2 cup
Green Chillies - 4-5(chopped)
Ginger Garlic paste - 1/4 spoon(optional)
Tomato puree - 2-3 spoons
(To make puree - take one medium sized tomato, cut into 2 equal halves, take each portion and grate it leaving the skin part alone. Throw off the skin part and use the puree)
Soy sauce - 1 spoon
Olive oil - 2 spoons(or any oil of your choice)
Salt and pepper - as per taste

Preparation:

  • Wash and soak the basmathi rice in water for 20 mins, Then, transfer it into the rice cooker with twice the amount of water and cook it. Once done, cool the rice in a plate.
  • Meanwhile, take a pan, add oil, once hot, add the onions, green chillies and saute till onions turn pink.
  • Add mushrooms. The mushrooms ooze out water so wait till they absorb all the water.
  • Now add ginger garlic paste, peas and fry for 2 mins.
  • Add soy sauce, puree, salt, pepper and fry well.
  • Now add the cooked rice and mix well.

Mushroom fried rice is ready. Serve hot with ketchup/ any kind of raita..
