Pudhina/Mint Rice

Pudhina rice is a flavorful Indian dish which combines mint with rice(with the addition of other ingredients). The prepared Pudhina paste can also be used as a side dish for curd rice, dosa etc.. It can be stored in fridge for 3-4 days.

Ingredients:

Pudhina - 2 bunches(wash and cut them into pieces)
Urad Dal - 4 spoons
Red chillies - 3-4
Salt - as needed
Mustard seeds - 1/4 spoon
Coriander leaves - few(optional)
Curry leaves - few(optional)
oil - 2 spoons

Preparation:
  • In a pan, add oil, once hot, add mustard seeds, curry leaves, urad dal and wait till urad dal becomes light brown.
  • Now add the red chillies, mint and coriander leaves and mix well. 
  • Add salt and fry this for the next 5-7 mins. The mixture will reduce in volume. Switch off the gas and keep aside.
  • Grind this mixture once it comes to room temperature.(without adding water)
The pudhina mix is ready and you can serve this with white rice and ghee!!!
